Follow the directions to quality baked products

Yesterday I told my wife that I'm going to start clearing out the kitchen cabinets of any kinds of things that we haven't used in a while. For instance, there's several boxes of cake mixes, brownie mix, fried chicken coating mix, cornbread mix and other stuff that needs to used or thrown away. I don't want to waste money by throwing something away so I decided to start using it up to make a little room in our cabinets. It's hard to find something when I go to cook that's part of the reason why I'm doing this. Last night I decided to use up the cake mix and make a cake. To make a long story short, It was hard because naturally you need to have a electric mixer to mix up the batter especially when your mixing up soft soft butter and sugar. I had to do it the hard way (by hand) and well, it could have came out better. I tried to soften up the butter by using the defrost feature on our microwave but overlooked the time and when I opened the microwave, it was a liquid. FIRST MISTAKE. Then when I tried to mix the dry ingredients with the liquid ingredients, I.E. , Butter and sugar mix with the cake flour ingredients It was difficult. SECOND MISTAKE. Directions on the box states: Use a mixer to mix ingredients together. We don't own an electric mixer. :-(  After ingredients are mixed, spread mix evenly into 3 round cake pans. We only have 2 so I spread it out evenly into 2 cake pans. THIRD MISTAKE. Make a mental note in my head to buy an additional cake pan. I followed the directions on the temp and time to bake. This morning after we frosted the cake and started to cut it, my wife said it doesn't look like it's done all the way through. DOH!!!!!!!  She's probably right because I didn't follow the directions to the recipe which says "use 3 cake pans" Using 2 cake pans would have meant increasing cooking times because of more cake batter but even so, my mixture was too thick and I think this contributed to the quality of the final product.THAT'S IT, I"M FINISHED!!! I'm frustrated using prehistoric methods to bake. I told my wife!!! I won't make another cake, bread or whatever until I can have a mixer and the one I want has all the attachments on it for making bread dough and all kinds of things. You know It's like one of those fancy models they use in restaurants. I want to buy one today but I don't know. All I do know is that I'm tired of making things without it. That still looks so yummy! And it is done in love so it makes it yummier! :) I can actually relate-- our kitchen cabinets are filled with boxes of mixed stuff that either needed to be cooked/baked or be thrown away. Guess what, we're not alone. I think almost all kitchen cabinets here in America are like that! :D

The cake looks delish and so colorful, nothing to worry Mr. Mike, your wife is always right :-) We have learned from our mistake and admit it, next time is different but a lot better :-)

I too have been longing for that Kitchen Aid Stand Mixer for like ages. It has been in my wishlist and still haven't beeb able to scratch that off the list. I want me one too with all the attachments and stuff. Hmmm.. looks like that cake turned out well.

electric mixers are really handy when baking cake. Don't worry though, the cake still looks yummy
