Fresh fried filipino lumpia

Yesterday my wife and I had to make 100 lumpia for one of our friends who takes care of our lawn in our apartment complex. Filipino lumpia is a mix of ground pork, ground beef, chopped jicama, chopped garlic, chopped onion, chopped carrots, 1-2 eggs and salt and pepper to taste all combined and rolled in a fresh lumpia wrapper and sealed with egg white, then fried in oil. I hadn't made in it in about a year. The last time my wife and I did this we ended up making 300 fried lumpia. It's a big job. Our friend had a party up in temecula so he requested us to make them and he paid us some money to make them. My wife posted a picture of them on Facebook and before you know it, her friends were all commenting how yummy they looked. She even had one friend drive all the way from her house in San Diego just to get some from us because she was craving for lumpia. My sister commented so today I will cook some more and bring them to her. My wife's friend wanted us to make her 100 lumpia also for this Saturday so looks like I'll be busy.

Filipino Lumpia

My wife and i had the apartment manager come over last week and ask us if we can make him 300 lumpia and some pancit for a party he's putting on on july 23, so i told him no problem. We purchased all the ingrediants and made the lumpia and put them in the freezer until we're reading to fry them up. Then we got a call from him just the other day asking if if we can make another 100 lumpia just in case so we told him we can do it. I had to go to seafood city in chula vista the other day to buy more ingredients and lumpia wrappers. I chopped up boneless, skinless chicken last night for the pancit and put it in a bowl of mamacita's barbecue marinade last night before i went to bed so that it can marinate overnight. This will give the pancit some flavor. So my task for today will be to mix the ingredients for lumpia and then my wife can roll them. She also will have the task of making the pancit. I love her pancit. It's so yummy and what more this time that we added some marinated chicken to the ingredients.

Fried Lumpia-Filipino Style

A recipe all Filipino's are proud of my wife and i are making plans to make some Filipino style lumpia as our landlord's manager will be throwing a party near the end of this month and has asked us if we can provide him with an order of 200 lumpia and an order of Filipino pancit. My wife makes some of the best pancit I've ever tasted and many of our friends and family love her Filipino pancit. I will make the lumpia and my wife will do the rolling part. We just love the taste of fresh fried golden brown lumpia and dipping them into sweet chili sauce. They taste so good when they just come out of the frying pan all crispy and crunchy. It just makes me want some right now. I like to eat them and drink some beer at the same time. Yummy, Yummy!! Here's my recipe for Filipino style lumpia: 4 cups coarsely grated jicama, 2 medium carrots coarsely grated, 2 small onions coarsely grated, 2 eggs, 1 half clove of garlic chopped, 1 lb ground beef, 1 lb ground pork, (or you can use 2lbs ground pork instead of 1 lb beef 1 lb pork) 1 teaspoon freshly ground black pepper, 2 teaspoons of salt, 2 egg whites for sealing the lumpia wrappers, 2 packages of panama lumpia wrappers cut from corner to corner, purchased at seafood city or your local Asian food store. mix all ingredients together. Take a tablespoon of lumpia mix and spread on the wrapper starting from the wide end. roll and fold both ends inside and finish rolling and seal end with some egg white. place on wax papered baking pan. If your not going to cook them right away i suggest you put them in the freezer until your ready to cook them. Fry them in hot oil (about 350 degrees) until golden brown. Serve with panama sweet chili sauce and enjoy. Bon Appetit....
